A native of Tokyo, Japan, Chef Shinya Asami has over 18 years of professional cooking, teaching and farming experience, and is also a pioneer in “organic and local casual dining concept” that has become very popular format in places like Whole Foods Market and other “natural grocery stores” across the country.
Other than cooking, he is also an avid advocate of “indoor hydroponic farming” which he has started his own in 2014, and a coffee professional who conducts numerous coffee related R&Ds and has established world’s very first “Vintage Coffee” concept.
Shinya had opened and owned two restaurants and one coffee bar in his career. Shambala Café (nation’s first organic casual dining concept) and Earthbeat Gallery & Organic Espresso Bar (nation’s first dedicated organic coffee espresso bar) in Santa Monica, California, and Bombore in Seattle. During Bombore years Shinya was named “one of the five best chefs in Seattle” by the organizer of Bite of Seattle, and has won 3 stars form Seattle Times.
Shinya’s cooking style is decidedly Japanese, but he also freely incorporates other ethnic components into his cooking. You may call it “Japan Centered Pacific Northwest” or “Pacific Northwest Youshoku", a style of Japanese cuisine that is heavily influenced by various western cuisines.
